Old Fashioned Split Pea Soup |

The night before you want to make this hearty soup, place a 1 lb. bag of dried Split Peas in a kettle and soak in two quarts of water over night. The next day, drain & rinse the peas and place them back in the kettle along with eight cups of fresh water.
Add The Following Ingredients:
1 - Medium Onion Chopped
3 - Carrots peeled and sliced
2 - Medium potatoes peeled and diced
1 - Meaty hambone or two smoked ham hocks
1 - tablespoon of dried parsley
1 - tablespoon of salt
1 - teaspoon of paprika
1/2 - teaspoon fresh ground pepper
Bring pot to a boil and then reduce heat to a simmer and cook 3-4 hours or until done. Hint: if you need to thicken soup, desolve a tablespoon of corn starch in a quarter cup of water and stir into soup. Serve with oyster crackers or croutons. Enjoy!!

Good & Easy Clam Chowder |

This clam chowder is so good you will think you are sitting at a dockside diner in Maine. Don’t tell anyone how you made it and stand back and wait for the complements.
Ingredients
2 or 3 cans of minced clams (your choice)
3 cans Campbell’s Condensed Cream of Potato Soup
2 cans Campbell’s Condensed New England Clam Chowder
1 quart of half & half
1 stick of butter (NOT margarine)
1 medium or large onion
¼ t ground pepper
1 t dry parsley flakes
1/4 t paprika
Melt butter in large soup pot or Dutch oven on low heat. Finely chop onion and add to butter. Drain canned clams, reserving liquid for later, and add to onions and butter. Cook over low heat until the onion is clear. Add all five cans of soup and gradually stir in the full quart of half- &-half. Add all of the seasonings and mix well. If soup gets too thick, add some of the reserved clam juice as desired. After everything is well blended and heated, you can pour into a slow cooker (Crock-Pot) and cook for 2 hours on low. I have also cooked it in a 175-degree oven in the oven proof Dutch oven for 2 ½ hours. The trick is not to scorch the soup - low & slow. Enjoy with oyster crackers and hot sauce on the side.

North Woods Slow Cooker Chili |

1- 15-ounce can dark red kidney beans
1- 15-ounce can mild chili beans
2- 15-ounce cans tomatoes
2- pounds lean ground beef browned and drained
2- medium onions chopped
1-green bell pepper seeded and chopped
2-cloves garlic crushed
2-tablespoons mild chili powder
1-teaspoon black pepper
1-teaspoon cumin
1-teaspoon salt
Combine all ingredients in your slow cooker and simmer on low for 8-9
hours. Cooking time can be speeded up by cooking on high for the first
1½ hours. Serve with shredded cheese and sour cream topping plus your
favorite crackers and beverage.
